Dry ingredients:

Wet ingredients:

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract 

Steps:

  1. Preheat oven to 350°F.
  2. Butter a loaf pan or line with parchment paper.
  3. In a bowl, combine all dry ingredients. Set aside.
  4. In a second bowl, whisk together all wet ingredients.
  5. Stir dry ingredients into wet ingredients, then mix with a spatula.
  6. Place in the oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
